Low & Slow Melt butter in a small non-stick pan over very low heat. Pour in eggs. Stir constantly with a rubber spatula, pushing eggs slowly from the edges toward the center. Remove from heat while still slightly wet and glossy — carry-over heat will finish them.
💡 The secret is patience and very low heat. High heat makes rubber. Low heat makes silk. If in doubt, pull the pan off the heat entirely for a few seconds and keep stirring.
