Sunday Chicken Soup

Ingredients
Base
1 whole chicken, cut up (or bone-in pieces)
2 qt chicken broth
1 onion, quartered (medium)
4 cloves garlic, smashed
3 stalks celery, chopped
3 carrots, sliced (large)
Herbs & Seasoning
1 tsp dried thyme
1 tsp dried parsley
salt & black pepper to taste

Build the Broth Place chicken in a large pot. Add broth, onion, garlic, celery, carrots, and herbs. Bring to a boil, skim any foam off the surface, then reduce to a steady simmer.

Simmer Low Simmer uncovered for 45–55 minutes until chicken is completely fall-off-the-bone tender. The broth should deepen in color and flavor.
💡 Don't rush this step — the collagen from the bones releases slowly and is what makes this broth truly restorative.

Pull & Return Remove chicken pieces with tongs. Let cool for a few minutes until handleable. Pull meat off the bones, discard skin and bones. Return shredded meat to the pot. Taste broth and season generously with salt and pepper.
